Baigani or batter fried eggplant is one of the chappan bhog receipe of Lord Jagannth.

Ingredients:

Besan 1/2 cup

Rice flour 1 tbsp

Pepper powder 1 tsp

Turmeric 1 tsp

Salt as per taste

Baigani
Add besan, rice flour, turmeric, pepper powder and salt in a bowl.
Mix well.
Add water and prepare batter neither too thin or too thick consistency.
Cut the eggplant in lengthy shape.
Dip them in the batter.
Deep fry in oil till golden brown and crisp.
Baigani is ready for bhog.

Notes:

I have used small Goti bigan here but you can use the lengthy once. In temple they use only Goti Baingan.

You can substitute red chilli powder for pepper powder.

You can also add ginger paste to it.
