Chakra Pheni also known as Padar pheni is one of the Chappan blog receipe of Lord Jagannath.

Ingredients:

Semolina / Chiroti rava 1 cup

Hot ghee/ oil 2 tsp

Salt 1/2 tsp ( optional)

Ghee 1 tbsp

Rice flour 2 tbsp

Ghee/ oil for frying

Powdered khand with cardamom powder for topping

Chakra pheni
Take 1 cup of Semolina in a bowl.
Add around 1 tsp of hot ghee/ oil.
Now add salt and water little by little to make a little tight dough than we prepare for chapathi.
Dough is ready. Close it and keep it aside for 1 hour.
In a bowl take 1 tbsp of ghee and beat well to make it soft for 3-4 min.
Whipped ghee is ready.
To this add 2 tbsp of rice flour and beat again.
Beat well again just like we do it for whipped cream for 3-4 more min.
Whipped rice-ghee mix is ready.
Now take the well kneaded dough and divide into small portions.
Roll the dough like this. It should be this much thin
Apply the rice-ghee mix on the rolled dough.
Repeat the same process with the rest of the dough and stack the rolled and ghee-rice mix applied chapatis one over the other like this.
Then roll it like this really tightly.
Rolled stacks of chapatis is ready.
Now cut them into around 1 1/2 inch apart like this.
Now take one cut part and press lightly on top like this.
Now roll it really lightly.
Rolled once is ready. You can see the layers in the middle.
Roll all the cut portion of the dough like this.
Fry them in oil on a low- medium flame.
Once the pheni comes on the top take a stick insert in the middle and with the help of another ladle splash the hot oil on the pheni so that the layers will open up easily.
Pheni is ready now. You can see how it has puffed up and opened up all the layers .
Repeat the same process with all the rolled dough and fry the pheni.
Finally sprinkle some powdered khand
with cardamom powder like this.
Chakra pheni is ready for Bhog.

Notes:

The oil/ ghee you add while preparing dough should be very hot. It should make sizzling sound once you pour it on the flour. It gives crispiness to pheni.

You can use corn flour instead of rice flour to make cream with ghee to apply on flattened dough.

Follow the instructions above while frying for best results.

In south India it is served with badam milk.
