Patishapta Pitha ( crepe with reduced milk filling) is one of the different types of Pithas offered to god in bhog. It is very famous in Bengal.
Ingredients:
For batter:
Rice flour 1 cup
Wheat flour 1/2 cup
Salt 1 tsp
Melted /powdered jaggery 2 tbsp
Stuffing:
Milk 1 1/2 cup
Melted jaggery 2 tbsp
Cardamom powder 1 tsp
Paste of milk 1 cup and rice flour 1 tsp
Patishapta pithaIna bowl add all ingredients rice flour, wheat flour, melted/powdered jaggery, salt a pinch. Mix well and add water little by little to prepare a smooth batter of pouring consistency.The batter should be of this consistency. Leave the batter for 1 hour.To prepare filling bring milk to boil. Keep stirring occasionally.Take 1 cup of milk, to this add 1tsp of rice flour and mix well to make a smooth paste.Once the milk reduces to half add this paste to the boiling milk.Now add melted/ powdered jaggery.Add cardamom powder.Once it turns this thick, take out of the stove.Grease the tawa or any kadai with ghee, then spread the batter like this. Keep the flame very low.Take a spoonful of stuffing, then place on one corner of the crepe like this.Now slowly roll the crepe like this.Repeat the same process with rest of the batter. Patishapta pitha is ready.
Notes:
You can also add 1/4 cup of semolina to prepare the batter.
Keep the flame very low while preparing the crepes.
