Ingredients:

Chopped kankada

Chopped pumpkin

Turmeric 1/2 tsp

Salt as per taste

Bayleaves

Ambula/ dried mango pieces

Jaggery 1 tsp

Ghee/ oil 2 tbsp

For masala paste:

Coriander seeds 1 tsp

Whole pepper 1tsp

Ginger

Cloves 2-3

Cinnamon 1/2 stick

Black cardamom 1

Kankada Tarkari
Ingredients.
Fry chopped kankada in oil/ ghee for 2-3 min.
Then fry pumpkin pieces.
Fried spine gourd and pumpkin, keep it aside.
In a pan add ghee/oil, to this add turmeric and bayleaves.
Now add grinded paste of soaked masala. Let it cook for 2 min.
Add jaggery,soaked ambula, and salt for taste.

Now add fried spine gourd and pumpkin, add little water bring it to boil for 2-3 min.
Kantola Tarkari is ready now.

Notes:

You can adjust the consistency of the curry by adding more water.

You can substitute tomato for ambula, you can also add red chilli powder, coriander powder, garam masala.

Prepare this healthy kantola/ spine gourd curry and offer bhog to god.
