Khai Manda or puffed rice dumpling is one of the chappan bhog receipe of Lord Jagannath.

Ingredients:

Puffed rice 1 cup

Urad dal 1/2 cup

Jaggery 1/4 cup

Coconut 1/2 cup

Cardamom powder 1 tsp

Pepper powder 1/4 tsp

Khai manda
Ingredients.
Soak urad dal and make a paste. To this add puffed rice and mix well.
Keep this mixture aside for 20- 25 min.
Prepare stuffing by melting jaggery with cardamom and pepper powder.
Add coconut and once the mixture thickens. Take out from the stove.
Now take a portion of the mixture and keep the stuffing in the middle,
Cover the mixture nicely.
Keep the prepared puffed rice dumplings in a bowl.
Bring the water to boil in a pan, once it starts to boil keep the bowl and steam it for 10 min. Khai manda is ready for bhog.

Notes:

There is no specific measurement for puffed rice, just keep adding till it makes a thick batter.
