Chena Muruki is one of the chappan bhog receipe of Lord Jagannth.It is very famous in Chandabali in Bhadrak district.
Ingredients:
Cut Chena / cottage cheese cubes
Powdered khand / sugar 3/4 cup
Elachi/ cardamom powder
Chena Muruki Ingredients.Prepare sugar syrup by adding equal amount of sugar and water and bring it to boil.Once sugar melts in water and starts to boil add Chena cubesIn another pan add 2 tbsp of sugar and carmalise it.Keep stirring the sugar for 5 min. On medium flame. Do not add water. Sugar will melt turn to brown color like this.Immediately pour the carmalised sugar into the boiling sugar syrup.If it turns hard like this, just leave it in the water. It will melt with the water.Keep adding little hot water while it is boiling, otherwise sugar syrup will turn hard.Let the chena boil in the syrup and absorb the sugar syrup, boil for 25-30 min till Chena turns into brown color.Chena has turned brown. You can boil for some more min if you want even more dark color. Take out from the syrup. Chena Muruki is ready for bhog.
Notes:
You can cut the shape of chena into any size and shape of your choice.
Keep stirring the syrup while it is boiling lightly from outside. Do not touch the chena otherwise it will break.
Keep the flame low-medium while Chena is boiling.
Pour the carmalised sugar immediately to the boiling syrup, it will become hard soon. If it turns hard after pouring into sugar syrup, just leave it. It will melt as syrup boils.
