Chena Tarkari or cottage cheese curry is one of the type of curry prepared at Puri Jagannth temple for Abhada Bhoga.

Ingredients:

Chena balls:

Chena/ cottage cheese

Coriander lesves

Crushed pepper 1 tsp

Whole wheat 1 tbsp

Sugar 1 tsp

Salt as per taste

Masala to prepare gravy:

Coriander seeds 1 tsp

Grated ginger

Jeera 1/2 tsp

Cloves 2-3

Cinnamon stick 1/2

Ambula / dried mango small piece

Poppy seeds 1 tsp

Green cardamom 2

Black cardamom 1

Ghee / oil 1 tbsp

Bayleaves

Turmeric 1/2 tsp

Pepper powder 1 tsp

Chopped pumpkin cubes

Chena Tarkari
Take Chenna. To this add chopped coriander leaves, grated ginger, pepper powder, whole wheat 1 tbsp.
Now mash Chena well with your knuckles to make it soft for 10 min.
Soft chena is ready now.
Take portion of chena and make round balls like this.
Now fry chena in hot oil till golden brown.
Fried chena balls are ready.
Soak coriander seeds, poppy seeds, ambula, peppercorns, cloves, cinnamon, green cardamom, black cardamom, cumin seeds , ginger, for 1/2 an hour.
Grind it to a smooth paste.
Take a pan add ghee, sugar1 tsp, pepper powder, turmeric.
Now to this add grinded masala and bay leaves.
Leave it to cook for 2-3 min till raw masala are well cooked.
Fry pumpkin cubes in hot oil.
Fried pumpkin cubes are ready.
Now add this fried pumpkin cubes and salt as per taste to the masala mixture.
Now add sufficient water and bring it to boil
After boiling for 10 min, once the gravy thickens add fried chena balls and bring it to boil for 7-8 min.
Chena Tarkari is ready.

Notes:

For grinding masala you can add tomato instead of ambula/ dried mango. In temple they do not use tomato.

You can add green chilli instead of pepper powder in chena .

While preparing gravy, you can add red chilli powder instead of pepper powder.

You can also grind few cashews and milk and add to gravy while boiling.

You can add potato instead of pumpkin. In temple they do not use potato.
