Ukhuda is a rice paddy coated in jaggery is a morning breakfast receipe of Puri Jagannth known as Gopal Bhallbh Bhog offered at 8- 30 a.m. in the morning.The offering is the first one of the daily Prasad to Lord Jagannath. It is also offered as bhog in Lingaraj temple in Puri.

Ingredients:

Puffed paddy rice 3 – 4 cups

Jaggery 1 cup

Ukhuda
In a pan add 1 cup of jaggery.
Add 2-3 tbsp of water.
Keep the flame low and let the jaggery melt.
Once it starts boiling check for consistency, drop the syrup in water, if you can make soft candy like balls, the syrup is ready.
Now add the puffed paddy to the jaggery syrup.
Mix well till all the jaggery syrup is well coated to the puffed paddy. Do it fast, otherwise the syrup will harden.

Notes:

You can substitute sugar for jaggery.

Keep the flame low throughout the process of preparation .
